🌿 Creamy Wild Garlic Chicken Orzo (Gluten-Free, Dairy-Free)

🛒 Ingredients (Serves 2–3)

  • 1 cup gluten-free orzo

  • 2 chicken breasts, diced or sliced thinly

  • 1 tbsp olive oil or butter alternative

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1–2 handfuls wild garlic, washed and roughly chopped

  • 200ml plant-based oat cream (e.g., Oatly or similar)

  • 1 tsp lemon zest (optional, for brightness)

  • Salt & black pepper to taste

  • Optional: a sprinkle of nutritional yeast or dairy-free Parmesan for richness


🥣 Instructions

  1. Cook the orzo according to package instructions. Drain and set aside.

  2. In a large pan, heat olive oil over medium heat. Add the onion and sauté for 3–4 minutes until softened.

  3. Add the garlic and chicken, cooking until the chicken is golden and cooked through (about 7–8 minutes).

  4. Stir in the wild garlic and cook for 1–2 minutes until wilted.

  5. Reduce heat slightly, then pour in the oat cream, stirring gently to coat everything. Simmer for 2–3 minutes to thicken slightly.

  6. Add the cooked orzo, lemon zest, salt, and pepper. Stir everything together until heated through.

  7. Serve with a drizzle of olive oil and optional cheese alternative on top.


🍋 Optional Variations:

  • Add sautĂŠed mushrooms or asparagus for extra texture.

  • Stir in a spoonful of Dijon mustard for a subtle kick.

  • Swap chicken for tofu or chickpeas for a vegetarian version.
